Often on a weeknight I have zero inspiration for food. It’s not that I mind cooking, it’s just that my brain can’t conjure up something delicious when all it wants is for me to have a looong nap.

Luckily, my husband sometimes has great ideas. As he works for himself and I don’t, he sometimes gets to the store during the day. Today was one of those and when I got home, he told me he’d picked up some chicken strips, spinach and mushroom.

Chicken, spinach and mushrooms? Did someone say quiche??? 

Now that sounded like a meal I could get behind, since quiche is basically a one pot (or in this case, oven dish) wonder! Sadly, he didn’t get any readymade pastry though but not to worry as luckily, making pastry is child’s play.

QUICHE for 2 (with leftovers for lunch the next day)

Ingredients:

For the pastry:

  • 1 cup of all purpose flour
  • 30 grams of butter (I used garlic butter)
  • ¼ cup water
  • ½ tspn salt (if using regular butter)

 

For the filling:

  • ½ cup grated cheese (cheddar or whatever your preference)
  • 1 cup roughly chopped mushrooms
  • 250 grams chicken
  • 1 cup shredded spinach
  • ¼ diced onion
  • 1 cup milk
  • 2 large eggs
  • 1 tblspoon garlic
  • 1 tspoom paprika
  • 1/2 tspoon cumin
  • Mixed herbs
  • Salt
  • Pepper

 

Method:

For the pastry:

  1. Put the flour in a bowl and add in the butter, slightly softened. Crumble with your fingers. Add in some water and roll until a ball is formed.  Set aside for 30 minutes.

For the filling:

  1.  In a non-stick pan, combine the onion and chopped mushrooms. Fry until the aroma of the mushroom is released and the onion is almost translucent. Add the garlic and cook for an extra 2 minutes.
  2. Add in the chicken and spices,  cook til the chicken is no longer pink inside. Turn the heat off and allow to cool a bit.
  3. In a separate bowl (I use a jug), whisk the eggs and milk together. Put aside.

 

  1. On a floured surface, roll your pastry out to fit your oven dish.
  2. Place a thin layer of grated cheese on the base of the pastry. Add in the chicken mixture as well as the shredded spinach.
  3. Pour the milk and egg mixture over and sprinkle with the remaining cheese.
  4. Bake in the oven for 30 minutes at 180 degrees.
