A staple go-to sweet treat in my life has always been banana loaf. As a kid growing up in a traditionally Cape Malay home, we didn’t make it all that much but yet it always made its way to our kitchen. Whether it came via a neighbour, a grandmother that sent a piece from up the road or even the store, it came and we ate.
And then I got married. I got married to a man that eats about one banana a day, sometimes buys them in bulk and so as a result, has a 2 or 3 to spare every second week. We would call this wastage but honestly, not much ever gets wasted in my house and so instead, we use them. So naturally, what’s one to do with overripe bananas?
Make banana loaf, of course!!
This recipe has one or two additions to the regular loaf, but is a sure delicious variation.
Banana Loaf Recipe
- 2 large bananas
- 1 ¾ cups cake flour
- 1 tspn baking soda
- ½ tspn baking powder
- ¼ tspn salt
- ¾ cup sugar
- ½ cup butter
- 1 tspn cinnamon
- ½ tspn mixed spice
- 1 tspn vanilla essence
- 2 eggs, beaten
Oven – 175 deg
- Cream the softened butter and sugar together in a large bowl.
- Add all the dry ingredients, and then the vanilla essence and eggs. Combine to form a mixture.
- Spoon the mixture into a small-medium size loaf pan.
- Bake for 45 – 55 minutes, or until an inserted stick comes out dry and clean.
