Flapjacks, pancakes and crepes  –  I can eat them all on any day at any occasion. The trick to mine is pretty simple, I use left-over mashed potatoes to give it that extra something! Of course, you can skip this ingredient and will still get a delicious flapjack, but I beg you to try the potato version and then tell me about it after 😉 A few of these, some honey and a cup of tea – pure bliss!


  • 1 cup of plain flour
  • 1 egg
  • 1 tspn baking powder
  • 2 tblspns sugar
  • ½ tspn vanilla essence
  • A pinch of salt
  • ½ cup of milk
  • 2 tbspn mashed potatoes



  1. Add all your dry ingredients, followed by the wet ingredients. Make sure to get a good consistency, with no lumps.
  2. Shallow fry in a medium-warm pan with regular or coconut oil.
