Flapjacks, pancakes and crepes – I can eat them all on any day at any occasion. The trick to mine is pretty simple, I use left-over mashed potatoes to give it that extra something! Of course, you can skip this ingredient and will still get a delicious flapjack, but I beg you to try the potato version and then tell me about it after 😉 A few of these, some honey and a cup of tea – pure bliss!
- 1 cup of plain flour
- 1 egg
- 1 tspn baking powder
- 2 tblspns sugar
- ½ tspn vanilla essence
- A pinch of salt
- ½ cup of milk
- 2 tbspn mashed potatoes
- Add all your dry ingredients, followed by the wet ingredients. Make sure to get a good consistency, with no lumps.
- Shallow fry in a medium-warm pan with regular or coconut oil.
- Pour some honey over it, or add a bit of caramel, and enjoy!
